  • Freshly ground black pepper

Preparation

Preparing the Meat

Remove the Black Angus picanha from the refrigerator about 30 minutes before grilling so that it reaches room temperature. Preheat the grill to 200–220 °C.

Grilling Picanha

Lightly brush the picanha with olive oil and sear it on all sides over high heat until a crispy crust forms. Then let it cook over indirect heat until it reaches an internal temperature of 54 °C.
Let it rest for 5–10 minutes before cutting.

Preparing Corn and Garlic

Grill the corn on the cob on all sides until they are golden brown and have developed a subtle roasted flavor.
Lightly score the tops of the garlic bulbs, drizzle them with a little olive oil, wrap them in aluminum foil, and let them braise on the grill until they're wonderfully creamy.

How to Make Herbal Oil

Finely chop the parsley, thyme, rosemary, and a little red chili pepper. Mix with high-quality olive oil, lemon juice, salt, and pepper, and let it sit for a few minutes so the flavors can blend.

Serving

Slice the picanha into thin slices against the grain and season with fleur de sel. Serve with the grilled corn, braised garlic, and fresh herb oil.
