Preparation

Preparing the Meat

Take the dry-aged Black Angus chop out of the refrigerator about 30 minutes before grilling so it can come to room temperature. Preheat the grill to 220–250 °C.

Grilling the cutlet

Lightly brush the cutlet with olive oil and sear it on both sides over direct heat until a nice crust forms. Then move it to the indirect heat area and let it cook until it reaches an internal temperature of 52 °C.

Let it rest

Let the meat rest for 5–10 minutes. Season with fleur de sel just before serving so that the flavors can develop fully.

Grilling Asparagus

Brush the green and white asparagus with a little olive oil and grill them directly over the coals until they are al dente and have developed a nice roasted flavor.

Serving
