  • 1 Swiss rack of lamb
  • Olive oil
  • Fleur de Sel
  • Freshly ground black pepper

Preparing the Grill

Preheat the grill to about 200 to 220 °C and set up both direct and indirect heat. This allows you to sear the meat first and then finish cooking it gently.

Grilling Sweet Potatoes

Cut the sweet potato lengthwise into wedges and brush them lightly with olive oil. Cook over indirect heat until tender, then grill briefly over direct heat until they develop a subtle roasted flavor.

Grilling Peaches

Cut the peach into wedges and grill them briefly over direct heat. They should caramelize slightly while retaining their natural sweetness.

Grilling the Lamb

Lightly brush the lamb with olive oil and sear it on all sides over high direct heat.

Then finish cooking it over indirect heat until it reaches an internal temperature of 56 °C.

Let the meat rest for 5 to 8 minutes before slicing. Season with fleur de sel and freshly ground pepper only at this point.

Serving

Arrange the grilled sweet potatoes and peaches on a large platter.

Cut the lamb into slices and arrange them on top.

Finish by garnishing with pomegranate seeds and finely chopped mint.
