Switzerland's first organic free-range poultry comes from Aargau. This farm was a pioneer—and has remained one ever since.
The chickens are raised slowly, with plenty of outdoor space, and without antibiotics. They’re slaughtered right on the farm. No transport, no stress, no last-minute compromises. The result in the meat: a firmness and depth of flavor you rarely expect from chicken—and always miss afterward.
Recipe
Generously salt the belly, stuff it with fresh herbs—thyme, rosemary, and a few cloves of garlic. Rub the outside with oil and season generously to taste. Roast at 180 °C for about 60–70 minutes, depending on weight. For the last 10 minutes, switch to top heat—this will make the skin as crispy as it should be. Core temperature of the breast: 74 °C. Then let it rest for 10 minutes before carving. Don’t forget the pan drippings afterward.

Flash-frozen at –40 °C—preserved immediately after slaughter, at the peak of maturity. You’ll choose your delivery date in the next step; shipments are made twice a week.
Thawing: 24 hours in the refrigerator, then 30 minutes at room temperature.
