Preparation
Sear briefly over high heat on the grill or in a pan. After letting it rest briefly, slice against the grain. As a guide: medium-rare at a core temperature of about 52–54 °C.
Origin & Distinctive Features
Swiss Black Angus beef. The flat iron is cut from the shoulder; the tough center tendon is removed during this process.
Serving Suggestion
About 200–250 g per person.
